Absinth is a strong spirit, usually having an alcoholic content of 60-70 percent. This liquor is not designed to be consumed straight.

It should be diluted with water - equal parts of water to Absinth. The addition of water opens Absinth up and gives it a full flavour. Its a drink you may sip on for 30 minutes or more as you relax and enjoy yourself.

Pour 60mls of absinth into a glass

Soak a cube of sugar on a teaspoon with absinth and light it

When the sugar is caramelised and the flame has gone out completely, dissolve the sugar in a glass of absinth

Add ice cold water to taste
